Chapter 1
EEL TOWN
We have been working on the water in the Peconic Bays for over 30 years. Oystering is the natural outgrowth of this process. Our oysters are grown in the pristine waters near Jessup Neck in Noyack Bay at the intersection of Shelter Island Sound. The swift current brings the food our oyster’s feast on with a balanced salinity. We chose the name EEL TOWN OYSTERS in honor of the sacred space on Shelter Island that is Eel Town. Like John Tut’s Hill and the many vistas that make living on Shelter Island a unique pleasure, Eel Town has the remembrance of things past.
Chapter 2
The Bohemian
We call our market oyster “The Bohemian”. Why? We live a life following the Art Spirit best described by Robert Henri. Our home was the scene of mid-20th-century Russian intelligentsia literary and artistic expression. Oystering is now a part of the continuum that flows from creativity, food, sustainability, community, and friendship. EAT A BOHEMIAN!
Chapter 3
Our Fleet
We have built or re built all the boats in our fleet. Our skiff is a stitch and glue plywood Garvey design built in our barn. Our 36′ former Navy work tender has been customized for the heavy work. And our 21′ Kencraft Baymaster, gratefully donated by Rod Anderson of Shelter Island, is helping the farm grow. Our custom built aluminum oyster barge became operational in 2021. It has the option of carrying a full size tumbler and has the required canopy during the warm months.
